Some cover crops you can plant in the fall to protect your soil during the winter, it include rye, which is a short-term cover crop that can be planted in the late summer and harvested in the fall.

However, it does not have a strong root system to hold the soil during the winter, so you shouldn't plant it in the same location three years in a row. 

3. Compost under cover

Cold frames are used to extend the growing season by protecting plants from excessive heat and cold.
